The aim of this course is to refresh the understanding of the Codex HACCP Principles and how they are applied to the development of a HACCP Plan. It includes a review of hazards and control measures, undertaking a hazard analysis, identification of Critical Control Points, monitoring procedures, corrective action, and verification. This course meets Coles Supermarkets Australia HACCP refresher training requirements. The prerequisite for this course is having successfully completed a recognized two or three day HACCP course since 2003.
